Avocado Summer Salad Recipe

Ingredients
  • & minced
  • 1 c Fresh orange juice
  • 1 Watermelon
  • 1 Serrano or jalapeno pepper; seeded, veined,
  • 6 c Chicken stock; chilled
  • 1/4 c Tequila; preferably aged
  • Coarse salt; to taste
  • 1/2 ts Grated orange zest
  • 2 tb sliced cilantro leaves
  • 1 lb Hass avocados; sliced

Directions
  • Step #1 In a mixer, mix avocado, cilantro, 3/4 c chicken stock, serrano or jalapeno pepper.
  • Step #2 Add orange juice, zest, salt, tequila, & remaining chicken stock.
  • Step #3 mix until smooth, in two batches if necessary.
  • Step #4 Strain through a sieve.
  • Step #5 Cut watermelon in half crosswise & hollow out, forming a tureen.
  • Step #6 Seed watermelon & cut into 1/2-inch cubes.
  • Step #7 Pour soup into watermelon & garnish with watermelon cubes, reserving remaining watermelon for another use.
