Avocado, Mango And Prawn Salad Recipe

Ingredients
  • 1/2 c Lime-Cumin Vinaigrette
  • 8 oz Jicama
  • 1 lg Avocado
  • 1/4 c Sunflower sprouts
  • 4 lg Radishes
  • Salt
  • 2 md Navel oranges
  • 24 sm Spinach leaves; whole
  • 1 sm Jalapeno; seeded & sliced

Directions
  • Step #1 Peel the jicama; thinly slice into rounds, the slice again into narrow strips.
  • Step #2 Peel & slice avocado.
  • Step #3 Cut oranges into either round slices or into sections.
  • Step #4 Thinly slice the radishes, then cut into narrow strips.
  • Step #5 Line a platter with the spinach leaves.
  • Step #6 Lightly scatter the jicama over it & intersperse with the avocado, oranges, & radishes.
  • Step #7 Spoon the vinaigrette over all.
  • Step #8 Spice up this with salt, Sprinkle top with chile, & garnish with the sunflower sprouts.
