Avocado, Tomato And Sprout Sandwiches; Chipotle-tofu Spre Recipe

Ingredients
  • 1 tb Balsamic vinegar
  • 1/2 lb Fresh baby spinach
  • 3 tb Olive oil
  • 1 ts Finely sliced tarragon
  • 1 tb Lemon juice
  • 2 Ripe avocados
  • 1/4 lb Sliced smoked salmon
  • Salt & freshly ground pepper

Directions
  • Step #1 Finely shred the spinach.
  • Step #2 Mix together olive oil, balsamic vinegar, tarragon, salt & pepper.
  • Step #3 Halve avocados.
  • Step #4 Remove stones, peel & chop.
  • Step #5 Toss with lemon juice.
  • Step #6 Cut smoked salmon into strips.
  • Step #7 Toss together spinach & olive oil dressing.
  • Step #8 carefully fold in avocado & smoked salmon.
  • Step #9 Serve.
