B-red Potato Home Fries Recipe

Ingredients
  • Or 48 slices party rye
  • 24 Sun-dried tomatoes -;
  • 24 sl Rye bread;
  • Freshly-ground black pepper
  • 1 1/2 lb Hickory-smoked peppered bacon; thick-sliced
  • 1 c Homemade or prepared mayonnaise
  • 2 c Mache; Other baby lettuce leaves
  • Coarse salt

Directions
  • Step #1 Heat the oven to 375 degrees with the rack in the center.
  • Step #2 Arrange the bacon strips in a single layer without touching on 2 baking sheets & bake, one at a time, in the oven for 10 mins.
  • Step #3 Drain, & let cool on paper towels.
  • Step #4 Crumble the bacon into small pieces, about 1/2-inch each.
  • Step #5 Set aside.
  • Step #6 Meanwhile, heat 3 c water in a small saucepan until almost boiling.
  • Step #7 Place the sun-dried tomatoes in a medium bowl, & cover with the very hot water.
  • Step #8 Allow the tomatoes to soak until they are soft, about 20 mins.
  • Step #9 Drain, pat dry, and finely chop.
  • Step #10 mix the tomatoes & the mayonnaise.
  • Step #11 Spice up generously with salt & pepper.
  • Step #12 Spread each bread slice with the mayonnaise mixture.
  • Step #13 Place bacon on half of the bread slices, Sprinkle top with pepper, add a layer of mache, & top this with the remaining bread.
  • Step #14 Slice each in half, & serve.
  • Step #15 For a buffet lunch or an afternoon tea, serve tea sandwiches in "boxes" made from hollowed-out loaves of bread.
