Baby Corn And Soya Paneer Salad Recipe

Ingredients
  • 2 tb Parsley
  • 4 Bay leaves
  • 2 c Leeks; cut in wide strips
  • Croutons; rubbed with fresh garlic cloves and extra virgin
  • 1 ts Chili flakes;
  • 4 oz Water
  • 2 oz Unsalted butter
  • Salt to taste
  • 2 Cloves garlic
  • 8 oz Dry white wine
  • 1 oz Garlic; sliced
  • 6 oz Extra virgin olive oil
  • 4 lb Manilla clams
  • Olive oil

Directions
  • Step #1 In a sauce pan heat the butter & olive oil.
  • Step #2 Add leeks, garlic, chili flakes & bay leaves.
  • Step #3 Cook over low heat/flame, stirring carefully.
  • Step #4 When the leeks are cooked, & almost transparent, but not browned, add washed clams & white wine.
  • Step #5 Cover & steam open on high heat.
  • Step #6 When they have opened, remove them from their shells, add water & salt to taste.
  • Step #7 Garnish with coarsely sliced parsley.
  • Step #8 Serve in soup bowls with croutons.
  • Step #9 Yield: 4 servings.
