Baby Corn Pakoras Recipe

Ingredients
  • 1 ts Dhania; powder
  • 1/2 ts Garam masala
  • 1 tb Channa dal
  • 2 tb Oil
  • 1/2 ts Mustard seeds
  • Salt to taste
  • 3 Pinches asafoetida;
  • 1/2 ts Ginger crushed
  • 1 tb Udad dal
  • 1/2 c Tamarind water
  • 1/2 tb Plain or wheat flour
  • 1/2 ts Garlic crushed
  • 1 tb Coriander leaves finely sliced
  • 1 ts Sugar
  • 1/2 ts Cumin seeds
  • 15 Tender baby corns boiled.;
  • 1 ts Red chilli powder
  • 1/4 ts Turmeric

Directions
  • Step #1 The babycorn must be pressure cooked till tender.
  • Step #2 In a saucepan, heat oil, add dals & saute till light golden.
  • Step #3 Add seeds, allow to splutter, add ginger, garlic, asafoetida, stir.
  • Step #4 Add tamarind water & bring to a boil.
  • Step #5 Add all dry masalas & let simmer till gravy thickens a bit.
  • Step #6 Add sugar & flour & stir.
  • Step #7 When the gravy is thick take off fire.
  • Step #8 In a casserole, arrange the the baby corn.
  • Step #9 Pour the hot gravy & poke with a fork to cover all corn.
  • Step #10 Grill in a hot over till the gravy sizzles & dries a little.
  • Step #11 Garnish with sliced coriander & serve hot.
  • Step #12 Making time: 30 mins Makes: 6-7 servings Shelflife: Prepare few hrs ahead & grill just before required.
