Ingredients
  • 6 sl Pancetta; up to 8
  • 1 lg Pack baby spinach;
  • 8 oz Button mushrooms

Directions
  • Step #1 --DRESSING----- 6 tb Olive oil 2 tb Balsamic vinegar Salt & pepper Wash & dry the baby spinach if not ready prepared.
  • Step #2 Fry or grill the pancetta until crispy, & chop.
  • Step #3 Arrange spinach in bowls adding the pancetta & mushrooms.
  • Step #4 Dressing: mix together well & serve this with the salad.
