1/4 Cucumber; finely sliced
1 bn Salad onions; trimmed and finely sliced
1/4 ts Ground cumin
2 tb Coarsely sliced fresh coriander
1 pk Baby swedes
1/4 ts Ground coriander
150 g Greek natural yogurt;
Salt & freshly ground black pepper
Directions
Step #1 Cook the baby swedes following preferred method of cooking as given on the packaging.
Step #2 Meanwhile, coriander leaves, salad onions, mix together the yogurt, spices, cucumber if using & add Spice uping to taste.
Step #3 Cover & put in the fridge the yogurt mixture until required.
Step #4 when the baby swedes are cooked, slice down the middle & fill with the cool spicy yogurt topping.
Step #5 Eat with the flesh of the swede discarding the skin.
Step #6 Notes An excellent lunch or snack on it's own or serve as an accompaniment to a main meal.
