Baby Vegetable Spring Rolls Recipe

Ingredients
  • Leaves
  • 1/4 Cucumber; finely sliced
  • 1 bn Salad onions; trimmed and finely sliced
  • 1/4 ts Ground cumin
  • 2 tb Coarsely sliced fresh coriander
  • 1 pk Baby swedes
  • 1/4 ts Ground coriander
  • 150 g Greek natural yogurt;
  • Salt & freshly ground black pepper

Directions
  • Step #1 Cook the baby swedes following preferred method of cooking as given on the packaging.
  • Step #2 Meanwhile, coriander leaves, salad onions, mix together the yogurt, spices, cucumber if using & add Spice uping to taste.
  • Step #3 Cover & put in the fridge the yogurt mixture until required.
  • Step #4 when the baby swedes are cooked, slice down the middle & fill with the cool spicy yogurt topping.
  • Step #5 Eat with the flesh of the swede discarding the skin.
  • Step #6 Notes An excellent lunch or snack on it's own or serve as an accompaniment to a main meal.
