120 g Lancashire cheese for sauce; rest to Sprinkle top on bacon
120 g Self raising flour;
1 ts Cornflour
100 ml White wine;
275 ml Milk & water mixed;
Directions
Step #1 Whisk together the egg, milk & water, self raising flour & salt.
Step #2 The batter should be light enough to make thin pancakes.
Step #3 If not light enough, add a little more water.
Step #4 Using a teflon coated pancake pan, make your pancakes.
Step #5 As a starter - 1 pancake per person.
Step #6 As a main course - 2 pancakes per person.
Step #7 Spread out pancakes.
Step #8 Grill 3 rashers of bacon per pancake.
Step #9 Cover the pancakes with bacon, cutting bacon where necessary to make it fit.
Step #10 Sprinkle top grated Lancashire cheese over bacon & roll up pancake.
Step #11 Place the pancakes on a tray in a cool oven.

Step #14 It is best to use sweet cured or smoked bacon as the salt content is considerably less.
Step #15 To make the sauce: carefully stir the cornflour into the cream, add the remaining Lancashire cheese & white wine, bring to the boil and simmer until the sauce is of a thick creamy consistency (about 2 mins).
Step #16 Remove pancakes from oven, put on a plate & pour over the sauce.
