Step #1 In 10" skillet, cook bacon until crisp, remove to paper towels and drain.
Step #2 Cook onions & garlic in bacon drippings until tender.

Step #6 mix cheese, flour, half-and-half, salt & pepper; mix until smooth.
Step #7 Add eggs, one at a time.

Step #12 Reserving 3 tbsp.
Step #13 of bacon for garnish, stir remaining bacon and cooked vegetables into cheese mixture.
Step #14 Lightly grease sides of an 8 or 9" springform pan, pour batter into pan.
Step #15 bake this at 350F 40 mins or until center is just set.
Step #16 Remove to wire cooling rack.

Step #24 com (Carolyn (Hugs!!) Shaw) on May 20, 1997 Jim's Notes: I didn't have any green onions on hand so I used parsley for greenery & I also wanted to reduce the fat somewhat.
Step #25 The low-fat Ricotta, sour cream & milk looked a little thin so I increased the flour.
Step #26 The bacon was well done to a crisp & very well drained.
Step #27 I decided to add a crust.
Step #28 There was enough cheese-milk mixture to fill a shallow nine inch pie crust & two individual ramekins lined with dried bread crumbs.
Step #29 The smaller, shallower dishes still took 40 mins to cook.
Step #30 These turned out really well despite the low fat substitutes.
Step #31 The cheesecake was rich & creamy tasting like it should be.
