Bacon, Pepper Jack And Scallion Quick Bread Recipe

Ingredients
  • 1 lg Onion; sliced
  • 2 lg Potatoes; sliced using mandolin
  • 2 ts sliced fresh thyme
  • 100 g Butter;
  • 200 g Field mushrooms; sliced
  • 100 g Smoky bacon;
  • 1 Crushed clove of garlic
  • 1 Sheet puff pastry
  • Egg wash

Directions
  • Step #1 Place the pastry on a greased baking sheet.
  • Step #2 Saut? off the onion and bacon & small bits of garlic until softened.
  • Step #3 Saut? off the mushrooms in the butter & pour the bacon & onion over the pastry.
  • Step #4 Lay the potato slices down either side of the pastry & pour the saut?ed mushrooms down the centre.
  • Step #5 Bake for 25 mins in a preheated oven at 180?C/350?F/gas mark 5.
