Bajan Beans, Take 3 Recipe

Ingredients
  • 1 ts Garlic grated
  • 1 Tomato finely sliced
  • 2 ts Lemon juice
  • 1/2 ts Turmeric powder
  • 1/2 ts Punjabi garam masala powder;
  • 2 tb Oil
  • 1 ts Red chilli powder
  • Salt to taste
  • 2 Onions finely sliced
  • 1 ts Ginger grated
  • 2 Red chillies dried crushed
  • 1 ts Cumin seeds
  • 2 ts Ghee
  • 1 ts Dhania powder
  • 1/2 ts Cinnamon-clove powder;
  • 2 Brinjals large; seedless, healthy

Directions
  • Step #1 Hold the brinjals with stems over fire, to burn skin.
  • Step #2 (Or run a few drops of oil, microwave in a loose-lid bowl for 3 mins).
  • Step #3 When skin blackens, hold under running water.
  • Step #4 Skin will not blacken if microwaved.
  • Step #5 Therefore peel.
  • Step #6 carefully scrub off skin.
  • Step #7 Mash brinjals to a puree.
  • Step #8 Heat oil in a heavy kadai.
  • Step #9 Add ginger garlic & stirfry for a min.
  • Step #10 Add onions, all dry masalas, except red chilli powder, stiry for a min more.
  • Step #11 Add tomatoes, salt, brinjals, lemon juice & stir.
  • Step #12 Simmer for five mins.
  • Step #13 Take in serving bowl.
  • Step #14 Just before serving, heat ghee in a small pan.
  • Step #15 Hold pan over bowl, add chilli powder, & pour as soon as possible over bhartha.
  • Step #16 Do not allow the chilli powder to burn.
  • Step #17 Garnish with sliced coriander.
  • Step #18 Serve hot with tandoori roti, paratha, etc.
