Baked Eggplant And Feta Recipe

Ingredients
  • 1 lg Eggplant
  • Pita bread or crackers
  • 1 tb Olive oil
  • 1 ts Oregano; sliced
  • 2 tb Parsley; sliced
  • 1 lg Onion; peeled & quartered
  • 3 Garlic cloves; unpeeled
  • Olive oil
  • 1/8 ts Each salt & pepper
  • 1 Red bell pepper; halved and seeded
  • 4 oz Feta cheese; crumbled
  • 2 ts Lemon juice

Directions

  • Step #2 preheat your trusty oven to 350F.

  • Step #4 Halve eggplant lengthwise.
  • Step #5 Brush all sides with olive oil.

  • Step #7 Place halves cut-side down on a baking sheet.

  • Step #11 Brush onion, garlic & red pepper with oil; add to eggplant.
