Baked Flounder Rolls With Tomato, Bell Pepper, And Bacon Recipe

Ingredients
  • 1 Zucchini; cut into 2-inch julienne strips
  • 1 Yellow squash; cut into 2-inch julienne strips
  • 1/2 ts Coarsely ground black pepper
  • 2 tb Finely sliced fresh parsley leaves
  • 1/4 c Dry white wine
  • 3 Carrots; cut into 2-inch julienne strips
  • 1/4 c Olive oil
  • 3 tb Fresh lemon juice
  • Six; flounder fillets, halved lengthwise & Spice uped with salt & pepper
  • 1 Onion; sliced thin

Directions
  • Step #1 In a bowl whisk together the wine, the parsley, the pepper, the oil, the lemon juice, & salt to taste & add the onion.
  • Step #2 In another bowl toss together the carrots, the squash, & the zucchini, add about 1/4 c of the liquid from the onion mixture, & toss the mixture well.
  • Step #3 Spread the onion mixture in the bottom of a greased glass baking dish, 15 by 10 by 2 inches.
  • Step #4 On a work surface arrange the flounder fillet halves, beginning with the narrow end roll up each fillet half jelly-roll fashion, skinned sides up, & secure each roll with a wooden pick.
  • Step #5 Arrange the fish rolls, seam sides down & not touching each other, on the onion mixture, put an oiled sheet of parchment or wax paper directly on them, & bake the mixture in the middle of a preheated 400F.
  • Step #6 oven for 8 mins.
  • Step #7 Spread the vegetable mixture around the rolls & bake the mixture, for 7 to 12 mins more, the fish covered directly with the parchment, or until the fish just flakes.
  • Step #8 Transfer the vegetables to a heated platter, arrange the fish rolls on top of them, & spoon the juices over the top.
