Step #1 Pre-heat oven to 450-F degrees.
Step #2 Lightly coat a baking sheet with olive oil-based cooking spray & reserve.
Step #3 In a shallow baking dish, bread crumbs, paprika, salt, & cayenne pepper, black pepper, mix the cornmeal, & reserve.
Step #4 Dip each tomato slice into the egg white-and-water mixture, then dredge through the cornmeal-breadcrumb mixture to coat.
Step #5 Place slices in a single layer on the prepared baking sheet, & spray the tops of slices with the cooking spray.
Step #6 Bake for about 30 mins, or until golden brown.
Step #7 Sprinkle top with Parmesan cheese during the last 5 mins of baking, & serve as soon as possible.
