Baked Herb Cheese, Mixed Greens, Apricot Walnut Dressing Recipe

Ingredients
  • 1 1/2 c Baking Apple; sliced
  • 2 tb Fresh Lime Juice
  • 2 c Fresh Pineapple; sliced
  • 2 tb Onion; finely sliced
  • 1 Cooked; boneless Ham
  • 2 Oranges; peeled, sectioned, and sliced
  • 1/4 c Fresh Basil; minced
  • 1/8 ts Cayenne Pepper
  • 1/4 ts Ground Cumin

Directions
  • Step #1 Prepare the fruit mixture, oranges, cumin, lime juice, onion, combining the pineapple, apple, basil, & cayenne pepper in a large bowl.
  • Step #2 Cover & put in the fridge for up to 2 days, & be sure to allow ham to marinate for at least 4 hrs prior to baking & serving.
  • Step #3 Place ham on a rack in a shallow baking pan.
  • Step #4 Score the top in a diamond pattern.
  • Step #5 Insert a meat thermometer.
  • Step #6 Bake, in a 325-F degree oven for 1 1/2 to 2 hrs, uncovered, or until thermometer registers 140-F degrees.
  • Step #7 To serve, slice ham & pour a hearty line of the fruit mixture over the row of slices.
  • Step #8 You may serve any leftover fruit mixture as a compote, on the side.
