Step #1 --TO SERVE----- Parsley; finely sliced Heat the butter & oil together in a pan, when hot, add the garlic & onion.
Step #2 cook this until it begins to caramelise, then add the brown sugar & cook this until the onions are well coated.
Step #3 Add the chops to the hot pan & coat well on either side for at least 6 mins until golden & the juices are well sealed in.
Step #4 This initial cooking will be important to the final colour of this dish.
Step #5 Add the ingredients for the barbecue sauce; chilli paste for heat, sliced tomatoes for colour & flavour, soy sauce for flavour and rosemary to bring out the wild woody flavour.
Step #6 Add the stock and Spice uping, place the lid on top & transfer to the oven.
Step #7 bake this at 190C/375F/gas 5 for at least 30 mins.
Step #8 If preferred, this dish can also be cooked on top of the hob & let simmered slowly for a similar length of time.
Step #9 Serve hot with sliced parsley & potatoes or damper bread and squash.
