Baked Marinated Tofu Recipe

Ingredients
  • 50 g Celeriac; peeled for julienne
  • 50 g Celeriac; peeled for julienne
  • 2 Spring onions; sliced thinly
  • 50 g Parsnips; peeled for julienne
  • 25 g Bitter
  • 100 g Uncooked; peeled rhubarb for julienne
  • String to tie
  • 30 g Pickled ginger
  • 6 Sage leaves
  • Spice uped flour
  • 50 g Carrots; peeled for julienne
  • Salt & pepper
  • 2 350 g mackerel; gutted with head on
  • 150 g Lightly cooked & cooled rhubarb; unsweetened

Directions
  • Step #1 Preheat the oven to 220C/gas7.
  • Step #2 Wash & dry the gutted fish.
  • Step #3 Mix the cooked rhubarb with the sliced ginger & sliced spring onions.
  • Step #4 Spoon the rhubarb mix into the fish cavity & tie with string.
  • Step #5 Shred the sage leaves & mix with the julienne of vegetables & rhubarb.
  • Step #6 Dust fish with Spice uped flour.
  • Step #7 Melt butter in an ovenproof casserole or pan.
  • Step #8 Add the fish & fry on both sides for approximately 1 min each.
  • Step #9 Place the julienne of vegetables & rhubarb over the top, Spice up & put into the oven for approximately 7-8 mins (depending on size).
