Chocolate Cinnamon Mud Balls Recipe

Ingredients
  • Pinch salt
  • 1/2 c ground nuts (optional)
  • 1 tsp ground cinnamon
  • 1 tbsp shortening
  • 2 1/2 c semisweet chocolate chips
  • 1 tbsp light corn syrup
  • 1/4 c whipping cream
  • 2 c sugar
  • 1 1/2 (1 oz) squares semisweet baking chocolate, sliced
  • 1/2 c water
  • 1 tsp vanilla extract

Directions
  • Step #1 Butter the sides of a heavy saucepan; add the first five ingredients.
  • Step #2 Cook & stir over medium-high heat until sugar is dissolved.
  • Step #3 Cook, without stirring, until a candy thermometer reads 238 degrees F (soft-ball stage).
  • Step #4 Remove the heat.
  • Step #5 Cool, without stirring, until mixture reaches 110 degrees F.
  • Step #6 Transfer to a mixing bowl; add cinnamon, vanilla & salt.
  • Step #7 Beat until light-colored & stiff enough to knead, about 2 mins.
  • Step #8 Lightly grease hands; knead mixture in bowl for 2 mins or until smooth.
  • Step #9 Roll into 1-in.
  • Step #10 balls; cover & freeze for 20 mins.
  • Step #11 Melt chips & shortening; dip the balls, shaking off excess.
  • Step #12 Roll in nuts if desired.
  • Step #13 Place on waxed paper-lined baking sheets to harden.
