Baked Potatoes With Lebanese-style Beef Filling Recipe

Ingredients
  • 1 Green bell pepper; sliced
  • 4 lg Idaho or russet potatoes; peeled & cut into 1-1 inch pieces
  • 3 lg Carrots; peeled, halved lengthwise, & cut into 1/2 - inch thick slices
  • 1/4 c Olive oil
  • Salt & freshly ground black pepper to taste
  • 2 Sweet potatoes; peeled and cut into 1-inch pieces
  • 1 lg Yellow onion; peeled & cut into 1/2 inch- thick slices

Directions
  • Step #1 Pre-heat the oven to 375 degrees.
  • Step #2 In a large bowl, mix all the ingredients & toss to mix well.
  • Step #3 Transfer to an oiled baking pan & bake, covered with foil, for 30 mins.
  • Step #4 Uncover, & bake for an extra 30 to 45 mins, stir, or until tender.
  • Step #5 Place under a preheated broiler about 3 inches from the heat until golden brown.
  • Step #6 Yield: 6 to 8 servings.
