Baked Quinces With Wild Mushrooms Recipe

Ingredients
  • 150 ml White wine;
  • Splash of olive oil
  • 4 sl Thinly sliced pancetta; cut into pieces
  • 2 Plum tomatoes; peeled, seeded and cubed
  • 1 sm Pumpkin; peeled, sealed and cubed
  • Few sprigs fresh oregano; sliced
  • 1 Clove garlic; finely sliced
  • 1 Onion; sliced

Directions
  • Step #1 Fry onion, garlic & pancetta in the oil.
  • Step #2 Add the pumpkin & fry until golden.
  • Step #3 Add the wine, tomato & oregano.
  • Step #4 Spice up & turn into an oven proof dish.
  • Step #5 Bake for 20 mins, until the pumpkin is softened & golden.
  • Step #6 Garnish with extra sliced herbs.
