Baked Rice, Cheese And Vegetable Casserole Recipe

Ingredients
  • 1/2 c Egg beaters? 99% egg substitute
  • 1/2 ts White pepper
  • 1/2 ts Salt
  • 1/4 c Italian parsley; minced
  • 1 3/4 c Skim milk
  • 1 1/2 c Arborio rice; or long grain rice
  • 1 c Part-skim ricotta cheese
  • 1/4 c Parmesan cheese

Directions
  • Step #1 Cook rice in 4 quarts boiling water until barely tender, about 7 mins.
  • Step #2 Transfer to a mesh strainer & cool to room temp.
  • Step #3 Preheat overn to 350F.
  • Step #4 Greas a 9x13x2-inch baking dish.
  • Step #5 Whish egg stubstitute & milk.
  • Step #6 Add the cheeses & Spice upings.
  • Step #7 Stir in rice & mix well.
  • Step #8 pour this into prepared pan.
  • Step #9 Cover with parchment papter.
  • Step #10 Cover that with aluminum foil.
  • Step #11 Bake in oven until a knife inserted in center comes out clean, about 40-45 mins.
  • Step #12 remove this from oven; discard foil & parchment paper.
  • Step #13 Broild for 2-3 mins until light golden.
  • Step #14 Let rest for 10 mins before slicing into squares to serve.
