Ingredients
  • 2 Plum tomatoes; sliced
  • 4 Eggs
  • 3 oz Sliced prosciutto; sliced
  • 1/4 ts Freshly ground pepper
  • 1/2 ts Salt
  • 2 c sliced arugula
  • Leftover sauce
  • 3/4 c Grated Parmesan cheese
  • Nonstick cooking spray
  • 1 1/3 c Ricotta
  • 8 c Leftover spaghetti; tossed in

Directions
  • Step #1 Mix eggs, ricotta, prosciutto, pepper & salt in large bowl.
  • Step #2 Fold in leftover spaghetti & sauce.
  • Step #3 Spray 13- by 9-inch baking dish with vegetable spray & place pasta mixture in dish.
  • Step #4 Sprinkle top 1/4 c Parmesan over top.
  • Step #5 Cover top evenly with sliced arugula.
  • Step #6 Sprinkle top with extra 1/4 c Parmesan.
  • Step #7 Cover top this with layer of tomato slices.
  • Step #8 Sprinkle top with remaining 1/4 c Parmesan.
  • Step #9 bake this at 350 degrees 40 mins.
  • Step #10 (Note that smaller casserole will have shorter baking time.
  • Step #11 ) let this stand at about room temp 10 mins before cutting.
  • Step #12 Yields 6 to 8 servings.
  • Step #13 Each of 8 servings: 431 calories,475 mg sodium, 20 grams fat, 147 mg cholesterol, 1, 22 grams protein, 40 grams carbohydrates, 0.
