3 oz Ritz crackers; common crackers, oyster crackers, or dried corn bread, crumbled
3 tbsps; melted, for brushing
2 Sprigs Italian parsley; leaves picked and coarsely sliced
2 Live; hard shell select lobsters
4 oz Peeled raw Maine shrimp or raw scallops; cut into 1/2-inch or cooked crabmeat or lobster meat, dice
2 Sprigs tarragon; leaves picked and coarsely sliced
Kosher or sea salt
Freshly ground black pepper
8 tb Unsalted butter; plus
Directions
Step #1 Preheat the oven to 425F degrees.
Step #2 Melt 8 tbsps butter in a 9-inch skillet over med-heat/flame.
Step #3 Add the onion & cook for 5 mins until soft but not browned.
Step #4 stir in the the tarragon & parsley.
Step #5 If using raw shrimp or scallops, add them with the herbs & cook for 1 min.
Step #6 remove this from the heat & let cool slightly.
Step #7 If using cooked lobster or crabmeat, let cool, remove the pan from the heat as soon as you stir in the the herbs, & then add the lobster or crabmeat.
Step #8 Spice up this with salt & pepper.
Step #9 With a cleaver of chef's knife, split the lobsters in half lengthwise.
Step #10 Remove & discard the head sac & intestine.
Step #11 Remove the tomalley & the roe if present & place this in a small bowl.
Step #12 Break into small pieces using a fork.
Step #13 With the back side of a knife, crack the center of each claw on one side only.
Step #14 Spice up the lobsters lightly with salt & pepper.
Step #15 On a large roasting pan or baking sheet, place the halves together to resemble a butterfly.
Step #16 The tomalley & roe are optional for the stuffing.
Step #17 If you want to include them, mix them into the seafood mixture.
Step #18 carefully fold the crumbled crackers into the mixture.
Step #19 Divide the mixture evenly between 2 lobsters.
Step #20 If you are serving 1 lobster per person, spread the stuffing over the center so that the lobsters look whole again.
Step #21 Do not pack the stuffing tightly, or it will affect the even baking of the lobster.
Step #22 Brush the 3 tbsps melted butter over the exposed meat tail, stuffing & claws.
Step #23 bake this until the lobster is cooked through & the studding is crisp & golden.
Step #24 Bake 17 mins for a 1 1/2 lb lobster & 24 mins for a 2-lb lobster.
