Baked Sweet Potato With A Complete Twist Recipe

Ingredients
  • 1 sm Cinnamon stick
  • 1/2 c Dark corn syrup
  • 1 1/2 ts Salt; or to taste
  • 1/2 c White vinegar; distilled
  • 6 c Water
  • 3 tb Brown sugar; packed
  • 2 c Dried brown beans; see Note
  • 2 tb Butter; melted

Directions
  • Step #1 Note: The beans used in this dish are imported from Sweden & can be found in specialty food shops or Scandinavian markets.
  • Step #2 Pick over & rinse the beans.
  • Step #3 Add the water & soak the beans at least 12 hrs.
  • Step #4 Bring the beans & soaking water to a boil.
  • Step #5 Cover the pan & let simmer for 1 1/2 hrs.
  • Step #6 Add the salt, syrup, vinegar, brown sugar, butter & cinnamon stick.
  • Step #7 stir this to mix.
  • Step #8 Simmer, for 1 hr, uncovered, or until the beans are tender.
  • Step #9 The liquid should be as thick as a sauce at the end of the cooking period.
  • Step #10 If the liquid is not thickened, turn up the heat for 10 mins, or until the liquid is reduced.
  • Step #11 Remove the cinnamon stick.
  • Step #12 Serve hot.
