Baked Whole Snapper Recipe

Ingredients
  • 1 Pink grapefruit; segmented, zest
  • 1 Lime; segmented, zest
  • Salt; to taste
  • 1 lg Orange; segmented, zest
  • Freshly-ground black pepper; to taste
  • 1 Black sea bass; abt 1 lb
  • 1 Lemon; segmented, zest
  • & juice reserved

  • 3 oz Cleaned spinach leaves
  • 3 oz Butter; melted
  • & juice reserved

Directions
  • Step #1 preheat your trusty oven to 400F degrees.
  • Step #2 Clean the bass by removing the guts and the gills & trimming off the belly flap.
  • Step #3 Spice up the fish with salt & pepper.
  • Step #4 Place the fish on foil & Sprinkle top with some citrus zest.
  • Step #5 Close the foil & cook for about 10 mins in the oven.
  • Step #6 In a small sauce pot reduce the juice & the remaining zest.
  • Step #7 Slowly add the butter whisking constantly, Spice up sauce & add all the segments, simmer.
  • Step #8 Saute the spinach & drain off any liquid.
  • Step #9 Remove the bass from the oven & from the foil, discard the citrus zest on it.
  • Step #10 Place the fish on top of the spinach & ladle with the citrus sauce.
  • Step #11 This recipe yields 1 serving.
