Baked Winter Fruits With Spiced Wine Recipe

Ingredients
  • 4 Floz apple juice
  • 3 Pears; preferably comice, just ripe
  • 12 Figs; dried but moist, up to 18
  • 1 Orange
  • 3 lg Cox's apples
  • 18 Soft dried apricots
  • Greek yoghurt for serving
  • 1 pn Cinnamon
  • 1 oz Flaked almonds; toasted
  • 18 Prunes; ready stoned
  • 1 Lime; zest of
  • 1 sm Piec ginger; finely grated

Directions
  • Step #1 Pre heat the oven to 180C.
  • Step #2 Cut the unpeeled apples & pears into quarters, first removing the cores.
  • Step #3 place this in a large shallow glass or other ovenproof dish & add the prunes, figs & apricots.
  • Step #4 Remove the orange peel with a zester & set aside.
  • Step #5 Squeeze the juice over the fruit & mix with the apple juice, ginger & cinnamon.
  • Step #6 Cover with foil & place this in the pre heated oven for 1 hr.
  • Step #7 When baked, remove the foil, stir the fruit around so it is well coated with juice & place the dish under a hot grill for a couple of mins, so that the fruit just slightly chars in places.
  • Step #8 Garnish with the toasted flaked almonds & orange & lime zest, reserving some of each to garnish the Greek yoghurt.
  • Step #9 Serve hot or cold.
