1/3 c Vegetable shortening; such as Crisco, plus more
2 1/2 ts Baking powder
1 ts Salt
Directions
Step #1 preheat your trusty oven to 450 degrees.
Step #2 With fingers or paper towel, scoop up a little vegetable shortening & smear just enough to cover sides and bottom of 8- or 9-inch-diameter round baking pan.
Step #3 Put flour, baking powder & salt in large mixing bowl & mix well with fork.
Step #4 Add shortening & stir in the, cutting it into flour repeatedly with fork tines or by hand until mixture has texture of coarse sand.
Step #5 Add milk to flour & shortening mixture & stir with fork just until milk is mixed with other ingredients & there are no dry streaks of flour left.
Step #6 Don't mix too much.
Step #7 Dough should remain moist & sticky, which will make these biscuits rise high & have tender texture.
Step #8 Sprinkle top about 1/4 c flour on large cutting board or smooth counter top and spread out in circle.
Step #9 Coat hands with flour, then scoop dough from bowl & place on floured surface.
Step #10 Knead dough until smooth & pat into rough circle about 8 inches in diameter & 1/2-inch thick.
Step #11 You can cut biscuits into any size or shape you like.
Step #12 I use a 2-inch round cookie cutter.
Step #13 If you don't have one, use rim of small drinking glass to cut dough.
Step #14 You can also pat dough into square & use knife to cut square biscuits.
Step #15 Press cookie cutter firmly into dough at edge of circle, & then lift straight up.
Step #16 Repeat this step, cutting next circle close to first, until you have cut as many biscuits as possible from dough.
Step #17 Place rounds in greased baking pan, leaving a little room between them.
Step #18 When you have cut as many circles as you can from dough, you will have some scraps left.
Step #19 Gather together and pat dough (do not knead) into small circle, same thickness as before, & cut out as many biscuits as you can.
Step #20 Add to baking pan.
Step #21 Put pan on center rack of oven & bake.
Step #22 After 12 mins, check to see whether biscuits are done.
Step #23 They should be golden brown on top.
Step #24 Break 1 open to see if it is cooked through & not sticky in center.
Step #25 If dough feels sticky & damp, continue to bake another 3 to 5 mins.
Step #26 Take biscuits out of oven & let sit about 3 mins to cool just slightly.
Step #27 remove this from pan with spatula & either serve as soon as possible or store, tightly wrapped, for later use.
Step #28 Biscuits should always be served warm, so if they have cooled, reheat in preheated 350 degree oven 5 to 6 mins.
