Baklava Recipe

Ingredients
  • 3 tb Honey
  • 100 ml Double cream;
  • 2 ts Olive oil
  • 1 tb Rose water
  • 1 l Stock sugar syrup;
  • 1/4 ts Ground cinnamon
  • 100 g Clarified butter; melted
  • 150 g Ghee; melted
  • 250 g Pistachio and/or almonds; sliced
  • 500 g Filo pastry cut into 15x30cm; sheets

Directions
  • Step #1 Pre-heat the oven to 150?C/300?F/gas mark 2.
  • Step #2 Mix the clarified butter & ghee together then brush a little over the base & sides of a 15 x 30cm (6x12 inch) deep sided baking tin.
  • Step #3 place this into the baking tin 2 sheets of filo pastry then brush with the butter mixture.
  • Step #4 Repeat 10 times so a total of 20 sheets are layered, with every 2nd sheet covered in butter.
  • Step #5 Place the pistachio/almonds into a medium bowl then add the cinnamon, olive oil, honey & rose water & mix to mix.
  • Step #6 Spoon over the layered filo & spread out to cover totally.
  • Step #7 Drizzle the cream over the nuts.
  • Step #8 Repeat layering 2 sheets of filo pastry then brushing with butter 8 times, adding another 16 sheets in total.
  • Step #9 Using a sharp knife cut through lengthwise into 4 rows.
  • Step #10 Cut each row diagonally into slices 5cm (2 inches) long.
  • Step #11 Cover with foil.
  • Step #12 place this in the oven for 1 1/2 to 2 hrs until golden brown & each layer of pastry is cooked & crispy.
  • Step #13 remove this from the oven & pour over the cold sugar syrup, then leave to cool.
  • Step #14 When cool, serve this with ice cream or as a petit four with coffee.
