Banana Berry Brownie Pizza Recipe

Ingredients
  • 1/2 ts Salt
  • 1 3/4 c Flour; + extra for rolling
  • Banana-Raisin Caramel Sauce; see Note
  • 1 ts Baking powder
  • 2 Eggs; lightly beaten
  • 2 qt Vegetable oil; for deep-frying
  • 1 Ripe banana; mashed
  • Powdered sugar; in a sugar shaker
  • 1/3 c Milk

Directions
  • Step #1 Note: Add sliced bananas & rum-soaked raisins to your favorite caramel sauce.
  • Step #2 In a deep-fryer heat oil over medium-high heat to 365 degrees.
  • Step #3 Into a bowl sift together flour, baking powder & salt.
  • Step #4 In a large bowl whisk together eggs, banana & milk.
  • Step #5 Using a wooden spoon, beat dry ingredients into egg mixture until a biscuit-like dough forms.
  • Step #6 Lightly flour work surface & turn out dough.
  • Step #7 Pat dough out to a 1/4-inch thick round.
  • Step #8 Use a 2 1/2- to 3-inch biscuit cutter to cut out desired shapes.
  • Step #9 Reroll scraps.
  • Step #10 Fry beignets in small batches about 4 mins until golden, turning several times to color evenly.
  • Step #11 Using a slotted spoon carefully remove beignets & drain thoroughly on paper towels.
  • Step #12 To serve, arrange 3 beignets on each of 4 dessert plates & drizzle with Banana-Raisin Caramel Sauce.
  • Step #13 Shake powdered sugar over all & serve.
  • Step #14 This recipe yields 4 servings, about 1 dozen beignets.
