Banana Chocolate Bread Pudding Recipe

Ingredients
  • 1 tb Grated orange rind
  • 1 ts Each baking powder and baking soda
  • 3/4 c Buttermilk or plain yogurt
  • 1 c Mashed ripe bananas
  • 2 c All-purpose flour
  • 1/3 c Melted butter
  • 1/4 ts Salt
  • 1/3 c Packed brown sugar
  • 3 Eggs, beaten

Directions
  • Step #1 ---ICING------ 4 oz Cream cheese, softened 2 tb Butter, softened 1 c Icing sugar,sifted 2 tb Orange juice concentrate Grease 8 inch square cake pan & set aside.
  • Step #2 In large bowl, butter, beat together bananas, buttermilk, sugar, eggs & orange rind until mixed.
  • Step #3 mix flour, baking powder, baking soda & salt.
  • Step #4 Add to banana mixture; mix just until mixd.
  • Step #5 Spread in prepared pan.
  • Step #6 Bake in 350?F oven for 40 to 45 mins or until cake tester inserted in center comes out clean.
  • Step #7 Let cool in pan on rack.
  • Step #8 ICING: In bowl, beat together cream cheese & butter until soft; slowly beat in icing sugar & orange juice concentrate.
  • Step #9 Spread over cake.
  • Step #10 (Make ahead: Pack in airtight container & put in the fridge for up to 1 day.
  • Step #11 ) Makes 8 servings.
