Colombian Fresh Banana Cake With Sea Foam Frosting Coca-cola Recipe

Ingredients
  • 2 1/2 ts Baking powder 1 c Prunes, very well drained
  • 1/2 ts Baking soda & coarsely sliced
  • 1 ts Salt 1/2 c Walnuts, sliced
  • 1 c Old-fashioned rolled oats 1/2 ts Vanilla extract
  • 1/2 c Sugar 1 c COCA-COLA
  • 2 c All-purpose flour 3 tb Oil or shortening, melted
  • 1 Egg Prune halves

Directions
  • Step #1 you may substitute 1/2 c of dried prunes.
  • Step #2 Lightly spoon the flour into a measuring c; level off.
  • Step #3 In a large bowl, sugar, baking powder, stir this together the flour, rolled oats, baking soda, & salt.
  • Step #4 In another bowl, oil, the egg, beat with a fork, & vanilla extract until well mixed.
  • Step #5 Add to the flour mixture.
  • Step #6 Add the Coca-Cola, prunes, and nuts; mix thoroughly with a spoon.
  • Step #7 Turn into a well-greased, lightly floured, 9x5x3-inch loaf pan.
  • Step #8 Garnish with prune halves, if desired.
  • Step #9 Bake in a preheated, 350 degree F oven for about 1 hr or until a wooden toothpick inserted in the center comes out cleans.
  • Step #10 Cool on a rack for 20 mins before removing the bread from the pan.
  • Step #11 store this in foil overnight before slicing.
  • Step #12 Makes 1 loaf.
