Sarah's Pizza Crust Recipe

Ingredients
  • 1 lb Cooked ham, cut in 1" cubes 1 lb Salt pork, cut in 1/2"
  • 4 Blue crabs, lg 1 1/2 lb Beef stew meat, in 1" cubes
  • Hot pepper sauce Crackers
  • 4 lb Shrimp
  • 2 cn Whole tomatoes 4 Bay leaves, crumbled
  • 1/4 c Sugar 1/4 c Parsley flakes, dried
  • Oil 1 lb Link sausage, sliced
  • 1/2 lb Chicken gizzards, sliced Cubes
  • 2 Onions, lg, sliced 2 Gn bell peppers, lg, sliced
  • 5 Celery stalks, sliced 4 Cloves garlic, crushed
  • Salt, pepper Hot cooked rice
  • 2 lb Chicken wings & backs 1 1/2 lb Okra, fresh

Directions
  • Step #1 Clean crabs, discarding spongy substance in main shell.
  • Step #2 Reserve claws and other meaty portions.
  • Step #3 Clean shrimp, reserving shells.
  • Step #4 Place shrimp shells in deep saucepan with water to cover generously & let simmer 30 mins or longer to make broth.
  • Step #5 Pour oil into heavy skillet to depth of 1/8 inch.
  • Step #6 Heat & add beef, sausage, ham, gizzards & salt pork.
  • Step #7 Saute until lightly browned, stirring every once in awhile.
  • Step #8 Pour meat mixture into large kettle & add 1 can tomatoes & enough strained shrimp broth to cover generously.
  • Step #9 Add bay leaves, cover & let simmer about 30 mins.
  • Step #10 Heat 2 tbsps more oil in skillet & add onions, green peppers, celery and garlic.
  • Step #11 Saute until lightly browned, stirring now & then.
  • Step #12 Add vegetable mixture & chicken parts to kettle & let simmer 30 mins longer.
  • Step #13 Heat 2 tbsps oil in another heavy skillet, until lightly browned & loses stickiness, add okra & cook, stirring often, about 30 mins.
  • Step #14 Add shrimp to okra & saute 3 or 4 mins longer, or until shrimp turns pink.
  • Step #15 stir in the 2 tbsps sugar.
  • Step #16 Add okra mixture to kettle.
  • Step #17 Drain second can of tomatoes, reserving liquid.
  • Step #18 Add tomatoes, crab & enough tomato liquid & water from shrimp shells to keep mixture in kettle soupy.
  • Step #19 Simmer about 30 mins.
  • Step #20 Add parsley flakes & remaining 2 tbsps sugar.
  • Step #21 Spice up to taste with salt & pepper.
  • Step #22 Serve at once or put in the fridge & reheat later.
  • Step #23 Serve over hot rice in deep soup bowls.
  • Step #24 Pass hot pepper sauce & crackers with gumbo, if desired.
