Step #1 preheat your trusty oven to 350F.
Step #2 Press moisture out of ricotta cheese.
Step #3 Scald milk & pour over beaten eggs.
Step #4 Pour out the mixture into a mixer or food processor & add the rest of the ingredients.
Step #5 Beat.
Step #6 pour this into shallow buttered dish.
Step #7 dust with cinnamon or nutmeg.
Step #8 Sprinkle top thin sliced alomnds on top.
Step #9 Set casserole dish inside larger pan partially filled with hot water.
Step #10 Cook 45 mins at 350F.
Step #11 To test if done, insert knife near edge of dish.
Step #12 If knife comes out clean, the custard will be done when cool.
Step #13 Let cool before serving.
Step #14 top this with chocolate curls if desired.
