Stained Glass Candies Recipe

Ingredients
  • 1 c Flour; all purpose 1 tb Lemon juice
  • 1 tb Sugar; granulated 3 tb Cornstarch
  • 1 Egg yolk 1 c Raspberries; fresh
  • 6 tb Butter; cold 3/4 c Sugar; granulated

Directions
  • Step #1 Fat grams per serving: Approx.
  • Step #2 Cook Time: :40 Pastry: In large bowl, stir this together flour, sugar & salt.
  • Step #3 With pastry mixer or food processor/blender, cut in butter till it resembles tiny peas.
  • Step #4 In small bowl & using fork, stir this together egg yolk, lemon juice & 1 Tbsp water; Sprinkle top over flour mixture.
  • Step #5 Stirring with fork, add a little more water if necessary to hold dough together.
  • Step #6 Using hands, carefully shape pastry into ball.
  • Step #7 Press dough 1/8" thick into flan pan.
  • Step #8 put in the fridge while making filling.
  • Step #9 Filling: preheat your trusty oven to 425F.
  • Step #10 In small saucepan, stir this together water & cornstarch till smooth.
  • Step #11 stir in the sugar.
  • Step #12 Add raspberries & cook, stirring, over medium-low heat for 10-15 mins or till thickened.
  • Step #13 Let cool; spoon into shell, filling no more than 2/3 full.
  • Step #14 Bake in 425F oven for 10 mins.
  • Step #15 Reduce heat to 350F & bake 15 mins longer or till pastry is golden brown.
  • Step #16 Let cool in flan ring 15 mins before removing to rack.
