Vegetable Rice Bake Recipe

Ingredients
  • 1 c Shredded Carrots 1/2 c Sliced Green Onions
  • 1/4 ts Salt 1 ts Hot pepper Sauce
  • 1 1/3 c Water 2/3 c Long grain Rice
  • 1/2 c Shredded lo-fat Cheddar chee
  • 8 oz Plain lo-fat Yogurt 1 tb Snipped fresh parsley
  • 1 ts Instant chicken bouillon 1/2 ts Ground Coriander
  • 15 oz Can Pinto / Navy Beans,drain 1 c Lo-fat Cottage Cheese

Directions
  • Step #1 In a large saucepan mix water, green onions, rice, salt, bouillon granules, coriander, carrots, & bottled hot pepper sauce.
  • Step #2 Bring to boiling; reduce heat.
  • Step #3 Cover & let simmer for 15 mins or till rice is tender and water is absorbed.
  • Step #4 stir in the pinto or navy beans, cottage cheese, yogurt, & parsley.
  • Step #5 Spoon into a 10x6x2" baking dish.
  • Step #6 Bake, covered, in a 350 deg F.
  • Step #7 oven for 20-25 mins or till heated through.
  • Step #8 Sprinkle top with cheddar cheese.
  • Step #9 Bake, uncovered, for 3-5 mins more or till cheese melts.
  • Step #10 Per serving: 282 calories, 19 g fat, 42 g carbohydrates, 489 mg sodium, 4 g fat, 14 mg cholesterol, 548 mg potassium.
