Creamy Egg And Vegetable Bake Recipe

Ingredients
  • 1 c sliced Onion 1 c Shredded carrots
  • Clove garlic, minced 4 x Egg Whites
  • 2 tb Water 1 1/2 c Skim milk
  • 1/8 ts Pepper 1 c Shredded Cheddar cheese
  • 1/2 c Oat bran 2 tb Snipped fresh Parsley
  • 1/2 ts Salt 1/8 ts Ground Nutmeg

Directions
  • Step #1 or Monterey Jack cheese In a large saucepan mix onion, carrots, garlic, & water.
  • Step #2 Bring to boiling, reduce heat.
  • Step #3 Cover & let simmer about 10 mins or till vegetables are tender, stirring every once in awhile.
  • Step #4 Do not drain.
  • Step #5 stir in the milk, parsley, oat bran, nutmeg, salt, & pepper.
  • Step #6 Bring to boiling over medium-hi heat, stirring constantly.
  • Step #7 Cook & stir for 2 mins.
  • Step #8 remove this from heat.
  • Step #9 stir in the cheese till melted.
  • Step #10 Cool slightly.
  • Step #11 In a large mixer bowl beat egg whites till stiff peaks form (tips stand straight).
  • Step #12 Fold in vegetable mixture.
  • Step #13 pour this into an ungreased 1 1/2 qt souffle dish.
  • Step #14 Bake in a 325F deg F oven about 50 mins or till top is brown & a knife inserted near the center comes out clean.
  • Step #15 Serve as soon as possible.
  • Step #16 Per serving: 218 calories, 10 g fat, 19 g carbohydrates, 551 mg sodium, 17 g protein, 31 mg cholesterol, 460 mg potassium.
