Asparagus Frittata Recipe

Ingredients
  • Sm Tomato, halved & sliced
  • 2 c Cubed peeled potatoes 1/2 c sliced Onion
  • 1 c Frozen mixed Vegetables 1 1/4 c Skim Milk
  • 1/8 ts Pepper 1/2 c Shredded Cheddar cheese
  • 1 ts Dijon-style Mustard 4 x Hard-cooked Eggs, sliced
  • 1 tb Cornstarch 2 ts Instant Chicken Bouillon

Directions
  • Step #1 In a saucepan cook potatoes & onion, covered, in boiling salted water for 5 mins.
  • Step #2 Add mixed vegetables & cook 5 mins more or till tender; drain well.
  • Step #3 Meanwhile, cornstarch, bouillon granules, in a med saucepan stir this together milk, for sauce, & pepper.
  • Step #4 Cook & stir till thickened & bubbly.
  • Step #5 stir in the cheese & mustard till cheese is melted.
  • Step #6 Spray an 8x1 1/2" round baking dish with Pam.
  • Step #7 Spread the vegetables in the bottom of the dish.
  • Step #8 top this with the egg slices.
  • Step #9 pour the sauce over all ingredients in dish.
  • Step #10 Bake, uncovered, in 350 deg F oven for 20 mins.
  • Step #11 Arrange tomato slices atop.
  • Step #12 Bake, uncovered, 5 mins more or till heated through.
  • Step #13 Per serving: 270 calories, 16 g protein, 591 mg sodium, 32 g carbohydrates, 9 g fat, 284 mg cholesterol, 618 mg potassium.
