Ingredients
  • Sm Acorn Squash 6 oz Lean ground Pork or Turkey
  • 1/4 ts Cinnamon 1/2 c Unsweetened Applesauce
  • 1/4 ts Salt 1/4 ts Curry powder
  • 1/4 c sliced Celery 1/4 c sliced Onion
  • Slice raisin bread, cubed

Directions
  • Step #1 Spray a 10x6x2 baking dish with Pam.
  • Step #2 Halve squash; discard seeds.
  • Step #3 Place squash, cut side down, in baking dish.
  • Step #4 Bake, uncovered, in 350 deg F oven 50 mins.
  • Step #5 Meanwhile, for stuffing, in a skillet cook turkey, celery, & onion till meat is no longer pink & vegetables are tender.
  • Step #6 Drain off fat.
  • Step #7 stir in the salt, curry powder, & cinnamon; cook 1 min more.
  • Step #8 stir in the applesauce & bread cubes.
  • Step #9 Turn squash cut side up in dish.
  • Step #10 Place stuffing in squash halves.
  • Step #11 Bake uncovered, 20 mins more.
  • Step #12 MICROWAVE Directions: Place squash, cut side down in a 10x6x2" microwave-safe baking dish.
  • Step #13 Micro-cook on 100% power (high) for 6 1/2-8 1/2 mins or till tender.
  • Step #14 Set aside.
  • Step #15 In a 1 qt casserole cook turkey, on high for 2-3 mins or till turkey is no longer pink, covered, celery, & onion, stirring twice.
  • Step #16 Drain.
  • Step #17 stir in the curry powder, salt, & cinnamon.
  • Step #18 Cook 30 seconds more.
  • Step #19 stir in the applesauce & bread cubes.
  • Step #20 Spoon into squash halves.
  • Step #21 Cook, uncovered, on high for 3-4 mins or till heated through.
  • Step #22 Per serving: 306 calories, 38 g carbohydrates, 23 g protein, 8 g fat, 384 mg sodium, 63 mg cholesterol, 1171 mg potassium.
