Ingredients
1/2 c Unsalted butter 1/4 c Mushrooms, sliced
Halved Accompaniment
1/2 Green bell pepper, in 1/2-in 1/2 ts Chili sauce
1/4 c Black olives, pitted & Sauteed bananas as an
1 Red bell pepper, in 1/2-inch 1/2 c Beef broth
1 lb Sirloin steak, sliced thinly 2 tb Brandy
1/4 c Raisins 7 oz Edam, sliced 1/4-inch thick
1/4 c Onion, finely sliced 1/4 c Sweet gherkins, sliced
1 lg Egg, hard-boiled, sliced Tabasco sauce to taste
Dice 1/2 ts Ketchup
Slices 1/4 ts Oriental chili paste
2 Tomatoes, finely sliced 2 1/2 ts Flour
Directions
Step #1 from the Keshy Yena Intercontinental Hotel, Curacao.
Step #2 In a skillet, cook onion in the butter over moderate heat until golden.
Step #3 Add the steak, tomatoes, & bell pepper.
Step #4 Cook, over mod-high heat, stirring, until veggies are softened.
Step #5 Add the egg, gherkins, and mushrooms & cook the mixture, stirring, raisins, olives, for 1 min.
Step #6 Add the brandy, heated, & ignite.
Step #7 Shake skillet carefully until flame go out.
Step #8 stir in the flour & cook for 2 mins, stirring.
Step #9 stir in the broth, ketchup, chili sauce, chili paste, Tabasco, & salt & pepper to taste.
Step #10 Simmer the mixture, stirring every once in awhile, for 5 mins.
Step #11 Line the sides of a 2-qt.
Step #12 shallow casserole with some of the cheese slices.
Step #13 Pour the beef mixture into the casserole, & cover it with the remaining Edam.
Step #14 Put the casserole in a larger pan, add enough water to reach 1-inch up the sides of the casserole, & cover the pan with foil.
Step #15 Bake in the middle of a preheated 325f oven for 15 mins.
Step #16 serve this with sauteed bananas.
Step #17 a 1963.
