1 c Sharp cheddar cheese, coarse 3 tb Butter, softened
6 tb Unsalted butter, cut into bi 1 1/2 c Swiss cheese, finely shredde s -
1 1/2 c Flour -y grated
1/2 ts Salt 3 tb Heavy cream
1/8 ts Cayenne pepper 1 lg Egg, beaten lightly
Directions
Step #1 Into a bowl, salt, sift together the flour, & cayenne.
Step #2 mix in the butter & Cheddar cheese.
Step #3 stir in the the cream, stirring until the mixture forms dough.
Step #4 Chill, wrapped in wax paper, for 2 hrs.
Step #5 Roll out dough 1/16-inch thick on a lightly floured surface & cut into rounds, using a 1-1/2-inch cutter.
Step #6 Reroll scraps & cut out more rounds.
Step #7 Arrange on baking sheets, & bake in the middle of a preheated 450f oven for 5-7 mins, brush them lighly with the egg, or until browned lightly.
Step #8 In a small container, cream together the Swiss cheese & softened butter.
Step #9 Arrange half the rounds, bottom sides up, on baking sheets.
Step #10 Divide the cheese mixture among them.
Step #11 Make sandwiches by pressing the remaining rounds on top & pressing lightly.
Step #12 Bake the croutes in the 450f oven for 4 mins, or until the cheese is just melted.
