Gumbo File' Recipe

Ingredients
  • 1 1/3 c Heavy cream, well chilled -ed
  • 1/4 c Unsalted butter 4 lg Egg yolks
  • Crust: 1/4 c Sugar
  • Filling: Garnish:
  • 1 1/2 c Chocolate wafer crumbs, fine 1/4 c Green creme de menthe
  • 1 1/2 ts Unflavored gelatin Mint flavored chocolate, gra
  • 1/4 c Sugar 1/4 c White creme de cacao

Directions
  • Step #1 In a bowl, stir this together the wafer crumbs, sugar, & butter until the mixture is mixd well.
  • Step #2 Pat mixture onto bottom & sides of a buttered 9-inch pie plate.
  • Step #3 Bake in the middle of a preheated 450f oven for 5 mins.
  • Step #4 Let cool completely.
  • Step #5 In a metal bowl, Sprinkle top the gelatin over 1/3 c of the cream & let it soften for 5 mins.
  • Step #6 Whisk in the sugar, creme de menthe, creme de cacao, & the egg yolks.
  • Step #7 Set the bowl over a saucepan of simmering water, and cook the mixture, whisking constantly, until it measures 160f on a candy thermometer.
  • Step #8 Transfer the custard to an ice water bath & stir until it is cooled & thickened.
  • Step #9 In another bowl, beat the remaining cream until it holds stiff peaks.
  • Step #10 Fold it into the custard thoroughly.
  • Step #11 Pour the filling into the crust & chill the pie for at least 4 hrs or until it is set.
  • Step #12 Sprinkle top with grated chocolate & serve.
