Foolproof Sourdough Starter Recipe

Ingredients
  • Danish blue Castello cheese,
  • 1 Garlic clove, minced
  • 4 oz Danish blue cheese or 8 oz.
  • 2 tb Dry white wine
  • Egg noodles
  • Or 1/2 tsp. dried basil
  • 1/4 c Marinated, dried tomatoes
  • 2 tb Minced shallots
  • 8 oz Green fettuccine or spinach
  • Chilled
  • 1 1/2 ts Finely sliced fresh basil,
  • 1/4 c sliced fresh parsley

Directions
  • Step #1 On waxed paper, divide cheese into 10 - 12 pieces; set aside.
  • Step #2 Drain oil from marinated tomatoes, reserving 1 tbsp.
  • Step #3 Cut tomatoes into thin strips & reserve.
  • Step #4 Prepare fettuccine according to package directions until al dente; drain & return to pot.
  • Step #5 Meanwhile, in small skillet over medium heat, heat reserved oil; add shallots & garlic.
  • Step #6 Saute until shallots are limp but not brown.
  • Step #7 Add wine, basil & reserved tomatoes.
  • Step #8 Heat through & keep hot.
  • Step #9 Add mixture to pasta; toss.
  • Step #10 Add cheese & parsley; toss again to melt cheese.
  • Step #11 Serve as soon as possible on heated plates.
