14-carat Cake With Vanilla Cream Cheese Frost Recipe

Ingredients
  • 1 ts Salt
  • 3 1/2 oz Coconut; flaked
  • 2 ts Cinnamon
  • 2 c Sugar
  • 1 1/2 ts Baking soda
  • 2 ts Baking powder
  • 4 Eggs
  • 2 c Carrot pieces
  • 1 1/2 c Vegetable oil
  • 8 oz Pineapple; crushed, drained
  • 3/4 c Walnuts
  • 1/2 c Walnuts
  • 1 3/4 c All-purpose flour
  • 1/2 c Apricot jam
  • 1/4 c Whole wheat flour

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 Grease & flour three 9" round baking pans.
  • Step #3 Mix together flour, sugar, baking powder, cinnamon, baking soda & salt in large mixing bowl.
  • Step #4 Set aside.
  • Step #5 Assemble electric mixer.
  • Step #6 Put 1/2 c walnuts in mixer container.
  • Step #7 Cover & process two cycles at grind.
  • Step #8 Add to dry ingredients.
  • Step #9 Put oil, pineapple and carrot pieces into mixer container.
  • Step #10 Cover & process five cycles at grind until carrots are finely sliced.
  • Step #11 pour this into bowl with dry ingredients.
  • Step #12 Add eggs & coconut Mix with electric mixer at medium lowish speed until ingredients are moistened.
  • Step #13 Increase speed to medium & continue to mix one min.
  • Step #14 pour this into prepared pans.
  • Step #15 Bake 30 to 35 mins or until toothpick inserted in center comes out clean.
  • Step #16 Cool for 10 mins, remove this from pan & cool on wire rack.
  • Step #17 When cool, frost top of each layer with Cream Cheese Frosting.
  • Step #18 Place layers on top of one another.
  • Step #19 Assemble mixer.
  • Step #20 Add 3/4 c walnuts to mixer container.
  • Step #21 Cover & process 2 cycles at grind.
  • Step #22 Set aside.
  • Step #23 Heat apricot jam in small saucepan over med-heat/flame until melted.
  • Step #24 Brush sides of cake with melted jam.
  • Step #25 Sprinkle top sides with slicedwalnuts.
