Curried Chicken Soup With Chickpeas And Cauliflower Recipe

Ingredients
  • 1 (13.5 oz) can coconut milk (optional, but very good)
  • Salt & freshly ground black pepper
  • 1 recipe Fast Chicken Soup Base
  • 2 c bite-size cauliflower florets
  • grated Parmesan cheese
  • 2 (16 oz) cans chickpeas, drained
  • 1/2 c sliced fresh cilantro
  • 2 tbsps curry powder

Directions
  • Step #1 Prepare Fast Chicken Soup Base.
  • Step #2 Bring to a simmer.
  • Step #3 Add these, 10-20 mins: 2 16-oz cans chickpeas, then simmer until tender, drained; 2 c bite-size cauliflower florets; 2 Tbs.
  • Step #4 curry powder; 1 13.
  • Step #5 5-oz can coconut milk (optional, but very good).
  • Step #6 Before removing from heat, stir in the: 12 c sliced fresh cilantro.
  • Step #7 Final touch: Add salt & pepper, to taste.
  • Step #8 Serve soup with grated Parmesan cheese.
