1981 World Championship Butterfield Stageline Recipe

Ingredients
  • 7 oz Whole green chiles; minced
  • 15 oz Tomato sauce
  • 1 tb Dry mustard
  • 6 oz Chili powder ;
  • 4 md Onions; minced
  • 1 cn Beer
  • 2 Beef bouillon cubes
  • 10 lb Lean beef brisket;fine chop
  • 1 ts Oregano
  • 1/4 c Oil
  • 1 1/2 Cloves garlic; minced
  • 2 lb Ground pork
  • 1 tb Cumin
  • 1 ts Salt
  • 1 oz Tequila
  • 1 lb Whole tomatoes; fine chop

Directions
  • Step #1 Brown onions & beef in oil.
  • Step #2 stir in the garlic, tequila, pork, tomato sauce, beer, dry mustard, oregano, alt, tomatoes, chiles, cumin, chili powder & bouillon cubes.
  • Step #3 Bring to boil, then reduce heat & let simmer 2-3 hrs.
  • Step #4 Stir every once in awhile.
  • Step #5 Do not stir the last 30 mins before serving.
