Dijon Four Bean Salad Recipe

Ingredients
  • 2 tbsps canola oil
  • 3 tbsps Dijon mustard
  • 1/2 tsp salt
  • 2 (16 oz) cans red kidney beans, rinsed & drained
  • 1/4 c sugar
  • 1 (15 oz) can white kidney or cannelini beans, rinsed & drained
  • 1 (10 oz) package frozen baby lima beans
  • 1/3 c white wine vinegar or cider vinegar
  • 1 (10 oz) package frozen cut green beans

Directions
  • Step #1 Cook lima & green beans according to package directions; drain.
  • Step #2 Place in a large serving bowl; cool.
  • Step #3 Add kidney beans.
  • Step #4 In a jar with a tight-fitting lid, mustard, mix the vinegar, sugar, oil & salt; shake well.
  • Step #5 Pour over beans & stir carefully to coat.
  • Step #6 Cover & put in the fridge overnight.
  • Step #7 Serve with a slotted spoon.
