60 Minute Mini-loaves Recipe

Ingredients
  • 3 tb Brown sugar
  • 1 c Coffee -- hot
  • 3/4 c Cocoa
  • 1/4 ts Salt
  • 2 c Sugar
  • 2 c Whipping cream
  • 2 2/3 c Flour
  • 1 1/2 ts Vanilla
  • 1 3/8 oz Heath bars
  • 1 c Margarine or butter -- soft
  • 1 ts Water -- hot
  • 1 c Buttermilk
  • 2 lg Eggs
  • 2 ts Baking soda
  • 1/2 ts Coffee instant

Directions
  • Step #1 preheat your trusty oven to 350~.
  • Step #2 Grease & flour 3, 8 inch cake pans.
  • Step #3 In large bowl, vanilla, buttermilk, mix flour, baking soda, margarine, sugar, cocoa, salt & eggs.
  • Step #4 With mixer on low, beat just until mixed, scraping sides with spatula.
  • Step #5 Add coffee to bowl.
  • Step #6 Increase speed to medium; beat 2 mins.
  • Step #7 Pour batter into pans.
  • Step #8 Bake 25-30 mins.
  • Step #9 Cool cake in pans on racks, 10 mins.
  • Step #10 remove this from pans and cool completely.
  • Step #11 While cake is cooling, chop Heath bars.
  • Step #12 Reserve 2/3 of theheath bar.
  • Step #13 In a c, dissolve 1/2 tsp instant coffee with 1 tsp hot water.
  • Step #14 Cool.
  • Step #15 With serrated knife, cut each cake in two, making 6 thin layers.
  • Step #16 In a bowl, beat whipping cream, brown sugar & cooled 1 tsp of coffee until stiff peaks form.
  • Step #17 To assemble cake, place 1 layer on plate; spread with 1/2 c whipped cream.
  • Step #18 Sprinkle top with 1/5 of the remaining Heath bar.
  • Step #19 Repeat layers 4 more times.
  • Step #20 top this with last layer of cake.
  • Step #21 Thinly spread whipped cream over top & sides of cake.
  • Step #22 carefully press reserved 2/3 of the Heaths onto top & sides of cake.
  • Step #23 put in the fridge until ready to serve.
