7-up Lemon Cheesecake With Strawberry Glaze Recipe

Ingredients
  • 2 c Boiling water
  • Juice of 1/2 a lemon
  • ----BASE-------
  • 2 c 7-UP
  • 6 oz Pkg lemon jello
  • 1 lg Can crushed pineapple
  • 2 lg sliced bananas

Directions
  • Step #1 --TOPPING----- 1 c Pineapple juice (if there -isn't enough, add water) 1/2 c Sugar 2 tb Flour 1 Egg, slightly beaten 2 tb Butter, melted 1 c Cool Whip or Dream Whip 1 Can Angel Flake Coconut 1/2 c Pecan pieces Mix the jello & boiling water.
  • Step #2 Cool.
  • Step #3 Add the 7-UP.
  • Step #4 When mixture is about to congeal, add the pineapple.
  • Step #5 Add the bananas which have been soaked in lemon juice.
  • Step #6 pour this into a 9x13 inch container & let chill until firm.
  • Step #7 To Make Topping: Mix the suagr & flour.
  • Step #8 Add the beaten egg and butter.
  • Step #9 Add the pineapple juice.
  • Step #10 Cook over low heat/flame until thickened, stirring as it cooks, until mixture is thick.
  • Step #11 Let cool Fold in whipped topping & coconut.
  • Step #12 Spread this topping over the firm chilled base.
  • Step #13 Sprinkle top with pecan pieces.
