7-up Pound Cake Recipe

Ingredients
  • CRUMB CRUST-----
  • 3/4 c Water -- not instant
  • Unsweetened frozen --
  • 1 1/2 c 7-up -- divided
  • 1 ts Cinnamon
  • 2 c Graham cracker crumbs
  • 6 tb Sugar
  • STRAWBERRY GLAZE-----
  • 7 UP FILLING-----
  • 1/2 c Butter -- melted
  • 1/2 c Strawberry jelly -- melted
  • 1/2 c Powdered sugar
  • 2 Eggs -- beaten
  • Whole strawberries
  • 1 pk Unflavored gelatin
  • Fresh strawberries -=OR=-
  • Thawed
  • 1 sm Lemon pudding & pie filling

Directions
  • Step #1 CRUST: mix well the graham cracker crumbs, powdered sugar, cinnamon, & melted butter.
  • Step #2 Press onto bottom & partway up sides of buttered 9" springform pan; chill.
  • Step #3 FILLING: Soften unflavored gelatin in 1/4 c 7-up for 4 mins.
  • Step #4 In a saucepan mix pie filling, sugar, beaten eggs & water.
  • Step #5 mix well.
  • Step #6 Add 1-1/4 c 7-up & bring just to a boil over med-heat/flame stirring constantly; remove this from heat.
  • Step #7 stir in the softened gelatin; cool 3 mins.
  • Step #8 Add 1/2 c of this warm mixture to softened cream cheese; mash together.
  • Step #9 Mix together with remaining 7-up mixture & stir until well mixed.
  • Step #10 Turn into chilled crust & chill for at least 8 hrs.
  • Step #11 remove this from pan & add topping.
  • Step #12 TOPPING: Brush top of chilled cheesecake with melted jelly.
  • Step #13 Arrange strawberried upright on cake & spoon any remaining melted jelly over them.
